Beef Fajitas

1 lb Ranchly Fajita Beef or Skirt Steak

1 tbsp avocado oil

1 tsp salt

½ tsp freshly cracked black pepper

2 tsp ground cumin

1 tsp ancho chili powder

1 tsp garlic powder

½ tsp dry oregano

½ tsp smoked paprika

2 tbsp butter

1 sweet onion, thinly sliced

1 red pepper, cut into strips

1 yellow pepper, cut into strips

Season beef with salt, pepper, chili powder, paprika, garlic powder, oregano, and cumin and let marinate at room temperature for 30 minutes. Heat large pan over medium-low heat. Add onion, peppers, and butter. Season with salt and pepper. Cook for 30 minutes, stirring frequently. Set aside and wipe out pan. Heat same pan over medium-high heat. Add oil. Sear meat for 2 minutes on all sides. Turn off heat and add peppers and onions. We like our fajitas with guacamole, cheese, chopped tomatoes, jalapenos, cilantro and plain Greek yogurt.
