Roast

  1. Preheat oven to 375°F.

  2. Season roast with salt and pepper.

  3. Place beef in roasting pan on top of carrots, celery, and onion (or veggies of your choice).

  4. Cook beef for about 15 minutes.

  5. Turn heat down to 225°F and cook for another 35 minutes per pound.

  6. Remove beef from oven.

  7. Wrap in foil and let rest for 15 minutes.

  8. Slice against the grain (to increase tenderness). Enjoy!
